O hai! I am a rock star because I made myself a YUMMY dinner last night! And it was like all healthy and crap. So here are my awesome culinary ~seekrits~ for you to enjoy.

Italian Chicken
1/2 chicken breast (for this I took 1 chicken breast and sliced into 2 thin chicken breasts, if that makes sense, and used one of those.)
1 tbsp red wine vinegar
1 tbsp extra virgin olive oil
Italian seasoning
Onion powder

Preheat oven to 350*. Mix liquids and seasonings together. Brush each side of chicken w/mixture and pan sear for 30 seconds on each side. Coat bottom of baking dish w/half your mixture. (I used a small dish since it was just for me.) Put chicken in and pour rest of mixture over chicken. Bake for 12 minutes. (I only baked it for 10 and it still tasted amazing but could have used the extra 2 minutes.)

Citrus Quinoa Salad
1/3 cup cooked quinoa, chilled
1/3 cup chopped cucumbers
1/3 cup chopped mangoes
1 tbsp extra virgin olive oil
1/2 tbsp red wine vinegar
1 tsp lime juice
Cumin

Mix liquids and seasonings - this is your "dressing". Toss cucumbers and mangoes w/dressing. Add quinoa and mix.

The salad recipe I came up with from a combination of salads I've had with the Prestons and the Beckers. The quinoa part was my idea because I've always wanted to try quinoa and IT IS SO GOOD. YAY. I only ate half of the salad but I probably could have had all of it. Or more chicken or something idk.
